General Description
L-Cysteine is a sulfur-containing amino acid mainly prepared by microbial fermentation or acid hydrolysis processes. Its molecular formula is C3H7NO2S, and its CAS number is 52-90-4. It is a key precursor for protein synthesis and antioxidant systems.
Application of L-cysteine
In the pharmaceutical industry, its derivative acetylcysteine is commonly used in expectorant drugs. Participate in the generation of glutathione, used to make detoxifying agents and hepatoprotective drugs.
In the food industry, it is used as a flour improver in baked goods to enhance gluten toughness and elasticity, making bread larger and softer in volume.
